- Para la olivada a mi manera cogemos 10 o 12 olivas (el resto las reservamos) y las ponemos en un vaso de turmix junto con 1/2 c.c. de ajo en polvo y 1/2 c.c. de cebolla en polvo, la ralladura de medio limón, un poquito de sal y pimienta, un chorrito de aceite y trituramos hasta que quede una pasta. Reservamos.
- En un bol amplio ponemos las patatas cortadas, el pollo y el huevo cocido en daditos, las olivas reservadas laminadas y un poco del pesto. Añadimos aceite y sal y pimienta al gusto y mezclamos bien.
- Para emplatar puse encima dos pegotes de pesto y la olivada y cebolla crujiente para dar otra textura. También puse un poco más de ralladura de limón para dar más frescura. Espero que os guste!!
