- 2 cebollas medianas
- 5 dientes ajo
- 8 tomates
- 200 ml caldo de pollo/verduras

- Calentamos el horno a 210°C. Cortamos las cebollas al estilo juliana, los dientes de ajo a rodajas. Con la punta del cuchilla sacamos el centro del tomate y cortamos por la mitad.
- En una sartén con aceite caliente ponemos la cebolla y los ajos. Seguidamente ponemos los tomates con la piel arriba y sofreímos 5 minutos.
- En una fuente apta para horno ponemos el tomate, el ajo y la cebolla y regamos bien con aceite y ponemos en el horno durante 20-25 minutos o hasta que los tomates estén blando y se partan con una cuchara.

- A loes 20 minutos añadimos la nata y dejamos reducir una vez más hasta que llegue al punto deseado.
- NOTA: La pechuga debe estar abierta para poder enrollarla, se puede hacer en casa o pedirlo al carnicero.
- Tostamos los piñones y los picamos con una picadora. Luego tostamos la almendra y ponemos en un bol grande aparte con los piñones picados.
- Trituramos los tomates secos y añadimos a los frutos secos tostados y picados. Rallamos el queso y el aceite y mezclamos todo junto hasta conseguir una pasta homogénea.
- Extendemos las tiras de tocino por la parte interior de la pechuga y seguidamente colocamos una cucharada de la pasta de tomate y queso y con las puntas de los dedos la esparcimos.

- Con cuidado enrollamos y atamos las pechugas.
- Sazonamos y freímos con aceite y un poco de mantequilla. Cubrimos la sartén con una tapa para que quede más jugoso.
- Una vez cocido, lo añadimos a la salsa y unos 15min. antes de servir lo calentamos en el horno.
