- Os explico tal como lo hacemos en casa, y como es típico de mi pueblo, nunca se pone caldo, siempre es agua y pescado muy fresco lo más importante es el sofrito y el punto del tomate frito, que no amargue.
- Primero cortamos la verdura y reservamos, ponemos bastante aceite, casi que cubra el fondo de la paella.
- En una cazuela aparte ponemos el agua a calentar con la hoja de laurel.
- Poner la cantidad de agua que marca el fabricante de pasta y un poco más.
- Empezamos a sofreír las gambas, después la sepia y Calamar, no dejar de mover.
- Apartamos a un lado el pescado y ponemos el pimiento a freír, después el ajo y sal.sofreír bien sin que se pegue. (bajamos el fuego)
- Cuando ya esté casi le ponemos el tomate y pimentón y entonces removemos todo. En mi caso yo nunca saco las gambas, sueltan todo su sabor y nos ahorramos poner caldo.
- Cuando el agua está caliente la incorporamos a la paella, dejamos hervir unos 15" probar de sal y añadimos si hace falta, también pimentón
- Tiene que tener un poquito de más sabor para que al añadir el fideo lo absorba bien.
- (El agua que se añade de más es el que se evapora en la cocción,) incorporar los fideos y cuando estén cocidos apartar.Mejor que quede un poquito jugoso que no secos.
- Se puede acompañar de alioli, pero no os hará falta,esta Deliciosa.....🍥🍻
