  3. Poner aceite en una paellera y marcar las gambas y los opcionales que queráis (almejas, langostinos...). Retirar y reservar. En la misma paellera tirar los fideos y tostarlos 1 minuto a fuego bajo mientras se remueven. Retirar y reservar también.
  4. Pochar la cebolla y el ajo en la misma paellera con aceite y a fuego bajo. Ya estando blandita, añadir el pimentón dulce y el tomate triturado. Remover hasta que se seque y poche todo.
  5. Añadir la sepia y remover durante dos minutos. Fuego bajo.
  6. Añadir los fideos, remover e integrar todo y repartirlos por la paellera. Añadir el caldo que estaba calentándose hasta que lo cubra todo. Subir a fuego normal/alto.
  7. Cuando empieza a hervir, 12 minutos de cocinado si son fideos del n°4. (Si son n°0, cocinar 2 o 3 minutos sólo y añadir desde el principio las gambas). Al minuto 7 añadir las gambas y los otros opcionales (almejas, langostinos...). Durante los 12 minutos ir añadiendo caldo cuando se seca.
  8. Hacer el allioli mientras se hacen los fideos. ADJUNTO RECETA de allioli.
  9. A los 12 minutos apagar el fuego y tapar la paellera durante 2 minutos. Después, destapar, servir, añadir allioli al gusto y disfrutar!
