  1. Poner en un bol las 4 yemas, los 80 gr de azúcar más los 30 cc de agua. Batirlo con máquina a baño María hasta que quede una mezcla liviana color cremita, el agua del baño María no debe hervir.
  2. En otro bol batir la crema de leche hasta que quede a medio punto
  3. En un tercer bol batir las 4 claras con los 20 GR de azúcar, yo una vez que empieza a tomar color blanco lo terminó de batir a baño María también y toma más cuerpo de esa manera.
  4. Una vez que tenemos todas las cosas batidas las mezclamos en un bol con el queso crema de manera envolvente para que no pierdan el aireado.
  5. En una bandeja de 20 cm por 40 cm esparcimos las galletas y las humedecemos un poco con el café mezclado con el coñac y la esencia. No pasarse con la humedad porque las vainillas también absorberán la humedad de la crema. Sobre la primera capa de vainillas colocar una capa de ccrema, luego otra de vainillas también humedecidas con el café y terminar con una capa de crema
  6. Cuando estén listas las capas rallamos el chocolate arriba hasta cubrirlo.
  7. Tip extra: si tenés frutillas o frambuesas como yo en este caso, podes usarlas para decorar y darle un toque diferente.
