  4. Ya que tengamos la mezcla agregaremos a una manga y con ayuda de la empezaremos a formar palitos
  5. Llevaremos al horno a 180 grados por 15 min
  6. JARABE DE CAFÉ
    Mise en place
  7. En una olla añadir el agua y el azúcar hasta que se integre
  8. Añadir el café soluble o el shot de expreso dejar que se incorpore y apagar el fuego (reservar).
  9. CREMA MASCARPONE
    Mise en place
  10. Acremar el queso mascarpone eh hidratar la grenetina (DATO: hidratar 3 a 4 veces el volumen de la grenetina)
  11. Paté a bombe
    Empezar a batir las yemas hasta blanquearlas
  12. Realizar el caramelo hasta tenerlo en punto de bola suave
    Agregar azúcar a un sartén y con ayuda de agua iremos agregando poco a poco hasta que ya esté toda esparcida por el azúcar
  13. Dejar hervir, verificar cuando observemos un burbujeó parejo para así revisar el punto de bola suave con ayuda de un recipiente con agua y una cuchara
    Tomar un poco de caramelo y agregar en un vaso con agua para que enfríe; con ayuda de nuestros dedos agarrar el caramelo y tratar de hacer una bolita
  14. Agregar el caramelo a las yemas y batir hasta tener una textura cremosa
  15. Fundir con ayuda del microondas la grenetina de 10 seg en 10 seg (esperar a que enfríe un poco)
    Integrar al paté a bombé e incorporar rápidamente
  16. Agregar el paté a bombe al queso crema eh integrar el extracto o licor de café
  17. Montar la crema
    Agitar la crema batida y empezar a batir hasta tener picos suaves
  18. Incorporar un 10% de la mezcla y batir
    Incorporar la mitad de la mezcla e integrar de forma envolvente
    Integrar la otra mitad de la mezcla e incorporar de forma envolvente
  19. ARMADO DEL TIRAMISU
    Sumergir nuestras soletas en el jarabe de café que hicimos anteriormente
  20. Armar la primera capa con las soletas
  21. Agregar el relleno
  22. Agregar una fina capa de cocoa en polvo
    Repetir el procedimiento hasta tener tres capaz
