- Empezamos haciendo un almíbar con el azúcar y el agua, ha de llegar a 115º, si no tenemos termómetro, cuando la burbuja de hervor sea más grande contamos hasta 20 y lo tendremos listo.

- En un bol a parte, añadimos las yemas y, cuando el almíbar a la temperatura que queremos se lo añadimos poco a poco a las yemas mientras las batimos con unas varillas eléctricas poco a poco, cuando lo hayamos añadido todo subimos velocidad al máximo y lo montamos. (Se trata de hacer un merengue pero con yemas) Lo colamos si quedan grumos.



- Hidratamos la gelatina y se la añadimos a 50 ml de nata que habremos calentado en el microondas y mezclamos hasta fundirse, se la añadimos a las yemas.


- Añadimos la crema de yemas al queso mascarpone y mezclamos hasta que esté homogéneo.


- Montamos la nata con las varillas eléctricas y le añadimos la mezcla de mascarpone. Mezclamos con una lengua o pala poco a poco, formando 8 para que no salga el aire de la nata.

- Para montarlo añadimos una capa de bizcocho abajo, empapamos con unas cucharadas del cafe, cubrimos con parte de la crema, volvemos a repetir una capa más y tapamos.



- Enfriamos en nevera 2 horas mínimo.

- Pasado el tiempo, espolvoreamos con cacao en polvo por encima y ¡listo para devorar!
