  1. 4 cucharadas café soluble
  2. 2 tazas agua caliente
  3. 4 cucharadas licor de naranja o vino dulce, ron o Brandy
  4. 250 gramos crema de leche
  5. 5 cucharadas azúcar blanca
  6. 4 yemas grandes
  7. 1 cucharada Vermouth bianco
  8. 400 gramos Queso crema o Queso Mascarpone (receta original)
  9. 24 plantillas (dependerá del tamaño de las mismas y del molde a usar)
  10. Cacao en polvo para espolvorear y otros confites

  1. Disolver las 4 cucharadas de café soluble en 2 tazas de agua caliente y las 4 cucharadas de licor o vino dulce (yo usé vino Marsala). Dejar reposar a temperatura ambiente.
  2. Batir a punto nieve la crema doble con 2 cucharadas de las 5 cucharadas del azúcar requerido.
  3. En otro bol batir 4 yemas grandes con el azúcar restante (3 cucharadas) y el Vermouth hasta obtener una crema suave y amarilla clara al Baño María a no más de 60 grados y a fuego lento. (🔴..es aconsejable por razones sanitarias, hacer este proceso en baño María y así evitar alguna enfermedad trasmisible por ingesta de yema cruda ‼).
  4. Poco a poco y revolviendo en forma manual agregar el queso crema (la receta original lleva mascarpone) a las yemas batidas, hasta lograr una mezcla cremosa y homogénea con volumen y no aplastada.
  5. Proceder a agregar y mezclar en forma ascendente la crema doble a nieve al bols con yema y mascarpone. La mezcla suave y ascendente retiene el aire y por tanto el volumen final.
  6. Comenzar a embeber sin enchumbar las plantillas en nuestro café ya preparado y forramos con ellas el molde a utilizar. En mi caso una fuente de cerámica de 25 por 25.
  7. Hecho nuestro piso procederemos con una capa generosa de crema, otra de plantillas embebidas y otra de crema. Puede si se quiere una tercera capa de plantillas a gusto del consumidor 😁.
  8. La decoración típica es con cacao en polvo espolvoreado. En mi caso le agregué algunos confites de chocolate negro y ralladuras de chocolate blanco.
  9. Llevar a heladera por un par de horas para que asiente y combine sabores.
  10. Una receta sensacional esta de "En casa contigo". Me di un auto gusto en este día tan especial...Feliz Día del Padre !!!!
