  2. El queso Mascarpone se puede sacar un rato antes de la nevera para que atempere.
  3. En dos recipientes separar las claras de las yemas de los huevos. Montar las claras a punto de nieve (se puede echar un poquitín de sal fina). Reservamos en frío. Echar el azúcar y las yemas juntos y batir hasta que quede una mezcla homogénea, y ahora poco a poco ir añadiendo el Mascarpone y batir hasta que tenga textura de crema, poco a poco.
  4. Ahora con una pala de silicona, añadimos poco a poco con movimientos envolventes las claras. Y tapamos y al frigo. Sacar el café con el licor e ir empapando los bizcochos y poniendo en el recipiente (os lo aconsejo cuadrado o rectángular, es más fácil cogerlo). Ponemos una capa de bizcochos y una capa de la mezcla anterior, así hasta que vayamos terminando. La capa superior debe ser de la crema que hemos hecho. Finalmente, espolvorear con cacao (puro mejor) y dejar enfriar al menos 6 h tapado.
