  1. Lo primero que voy a realizar es el bizcocho de soletilla, monto las yemas al baño María, para tener la temperatura ambiente junto a los 25 g de azúcar.
  2. Se montan las claras a punto de nieve y cuando está a punto de nieve se le incorpora el azúcar en forma de lluvia
  3. Se junta las dos masas y se le añade la harina junto a la maicena
  4. Se escudilla la masa con ayuda de una manga pastelera en la bandeja encima de papel sulfurizado (en mi caso puse papel de platina porque no tenía)
  5. Mientras el bizcocho está en el horno, ya previamente calentado a 175°, y durante 30/40' vamos realizando la crema de queso
  6. Montamos las yemas con el azúcar, hidratar las gelatinas y seguidamente ponerlas unos segundos en el microondas.
  7. Mezclar las gelatinas con las yemas y el queso a punto de pomada. Semimontar la nata y mezclar en dos partes las cremas de queso
  8. Para el empapado hacer 150 g de café (una cafetera aproximadamente) y lo mezclo con unas cuatro cucarachas de licor
  9. Seguidamente montamos el tiramisú, para ello en el molde ponemos la primera capa de bizcocho y lo empapados con el café, la segunda capa con crema de queso
  10. Repetimos el paso con otra capa de bizcocho y queso y terminamos con cacao en polvo con ayuda de un colador
