- 3 huevos
- 140 gr. azúcar+ 10g azúcar vainillado
- 60 gr. harina de repostería

- 250 gr. queso mascarpone
- 130 gr. queso tipo Burgos
- 1 cucharada azúcar vainillado
- 70 gr. azúcar glas
- --------------- Decoración:
- Azúcar vainillado
- Cacao en polvo
- Trocitos chocolate negro

- Para el bizcocho: Lo primero es precalentar el horno a 250ºC. Engrasar con mantequilla la bandeja del horno. Colocar encima un papel vegetal y volver a engrasarlo un poco con mantequilla para asegurarnos al 100% que nuestro bizcocho se desmoldará perfectamente.
- Preparar 50g de café y dejarlo enfriar. En el vaso de la thermomix colocar la mariposa y agregar los huevos y el azúcar. Programar 4 minutos, temperatura 37º y velocidad 4. Cuando termine volver a programar 3 minutos, velocidad 4 sin temperatura.
- Mezclar en un bol la harina con la levadura y agrégarla al vaso de la thermomix junto al café que teníamos reservado. Programar 15seg., velocidad 2½.
- Vertemos la mezcla en la bandeja de horno, sobre el papel vegetal, y lo extendemos bien sin que queden burbujas. Hornearlo a 250ºC, 5-6 minutos ó hasta que esté dorado. Mientras preparar otro papel vegetal sobre la encimera y espolvorearlo con cacao y azúcar vainillado. Sacar el bizcocho del horno y volcarlo sobre el papel vegetal preparado. Envolverlo con la ayuda del papel como un brazo de gitano y dejarlo enfriar.
- Para la crema: Con el vaso de thermomix ya limpio, colocamos la mariposa. Agregar el azúcar glas, el queso mascarpone, el queso Burgos y el azúcar vainillado. Programar 20-25 segundos, a velocidad 3.
- Desenrollar el bizcocho y extender bien con una espátula el relleno. Espolvorear cacao por encima de la crema y enrollarlo con mucho cuidado.
- Como decoración podemos espolvorearlo con fideos de chocolate, con un poco de chocolate blanco fundido o, en este caso, otro poco de cacao en polvo y trocitos de chocolate negro. Listo para disfrutar!
