- Se hidrata la gelatina con 5 cdas de agua caliente. Se reserva.
- Se ponen los 4 huevos a batir en batidora eléctrica a velocidad media. Hasta que estén bien espumosos.

- En una cacerola se coloca el azúcar y se cubre con agua, se lleva a fuego medio para que se realice el almíbar.

- Se deja hervir por 7'. En la superficie se forma una espuma blanca y los granos del azúcar no se deben sentir.

- Se va volcando nuestro almíbar sobre el batido de los huevos en forma de hilo. Una vez integrados se pine la batidora a batir en el nivel máximo hasta que la mezcla enfríe. Incorporamos la gelatina.

- Se coloca el queso dentro de un recipiente gde y se mezcla un poco con batidor de alambre para que afloje un poco la consistencia.
- Se va agregando en forma envolvente la preparación de los huevos al queso.

- Se mojan las plantillas de a una en la solución del café y se cubre el fondo de nuestro recipiente. Por encima se coloca una capa de la preparación y nuevamente otra de plantillas humedecidas en café. Se termina con una cubierta de la crema de queso.

- Se espolvorea toda la superficie con cacao amargo. Debe quedar bien cubierta. Pueden aparecer con el reposo unas burbujas de la crema que en el momento de presentar el postre se puede cubrir con otra capa de cacao espolvoreado.

- Cubrir la fuente con papel film y llevar al freezer por 2 hs, o a la heladera por 5 hs. De un día para el otro queda más rica.
