- Separar claras de yemas.


- Batir las claras hasta que estén montadas a punto de nieve. Cuando al voltear el bowl no se caen está listo.

- En el bowl de las yemas, agregamos 8 cucharadas de azúcar. Revolvemos hasta dejar una mezcla homogénea.



- Sobre las yemas y azúcar, agregamos mascarpone. Mezclamos hasta homogeneizar.


- Sobre la mezcla anterior, agregar la clara montada y mezclar con movimiento envolvente para que no se desmonte.



- El movimiento envolvente debe ser desde abajo hacia arriba.


- Debe quedar una mezcla homogénea como en la imagen.

- En una fuente comenzar a crear una capa de galletas pasadas por café.



- Sobre la capa de galletas agregamos la crema que hemos creado.


- Volvemos a generar una segunda capa de galletas, partiendo en el otro sentido de la fuente, para que las galletas de una capa y otra queden traslapadas (siempre pasando cada galleta por el café).

- Agregamos crema.

- Montamos la tercera capa de galletas.


- Agregamos crema sobre esta última capa.


- Espolvoreamos cacao amargo en polvo.



- Guardamos en el refrigerador por un par de horas. Luego solo queda disfrutar.
