  1. Remojar los moixernons en un bol con agua tibia y reservar.
  2. Salpimentar los filetes de carne y pasarlos por harina.
  3. En la cazuela donde vayamos a preparar el fricandó, poner un poco de aceite e ir marcando los filetes enharinados a fuego alto, vuelta y vuelta. Los vamos sacando a una fuente y reservando.
  4. En el mismo aceite donde hemos marcado la carne, vamos a poner la cebolla troceada pequeñita y la doramos.
  5. Una vez dorada la cebolla, añadimos los tomates rallados y los vamos a cocinar, removiendo de vez en cuando, unos 10 minutos a fuego medio-bajo.
  6. El siguiente paso es incorporar los filetes de carne que habíamos reservado y los dejamos sudar 1-2 minutos con el sofrito.
  7. Ahora añadimos el vino y las hojas de laurel. Dejamos que se evapore el alcohol, unos 3 minutos. Pasado ese tiempo añadimos el caldo o agua, los moixernons o setas y un poco de sal. Lo dejaremos así tapado a fuego bajo durante una hora. Que se vaya haciendo poco a poco.
  8. Mientras tanto preparamos la picada, con un mortero o picadora. Hay que machacar el ajo, con las almendras y el perejil y un poco del caldo del guiso. Añadiremos la picada al final, pasada la hora del cocinado y lo dejaremos 5 minutos más. Recitificar de sal y listo.
